Preparation Of Egusi Soup (melon soup).
Greetings to all my fellow steemians ✍️, writing this post is such a pleasure, today i will like to share**How to prepare Egusi soup (melon soup).
In our life's we all have many favorite soup or soup we love and cherish, for me egusi soup (melon soup) is my favourite soup, I love Egusi soup because it's one of the best soup in the East, in my state Enugu State (east) we all love Egusi soup because it out tribber soup not only because it my tribber soup but because I just love the soup unconditionally more than others.
and also Egusi soup is also popular Nigerian dish made with melon seeds (egusi) and various vegetables. And I will like to share it with everyone today. ⬇️
Here are some ingredients for preparation of the soup;
- two cups egusi or more than (melon)
- two cups of water
- two table spoons palm oil or vegetable oil
- one onion
- one cloves garlic if necessary
- one teaspoon ground crayfish
- one teaspoon ground pepper
- Salt to taste
- you can also add beef, goat meat, or fish e t c.
- stockfish if necessary
- vegetables (e.g., bitter leaf, or ugu)
- Seasoning cubes (optional)
All the steps for a perfect preparation
- Prepare the egusi: Grind the egusi seeds into a paste using a blender or granding mechine, and boil hot water at least two cup, and add the onion.
- Add the palm oil: About two tablespoon of it, the palm oil is one of the major ingredients in the soup making, without it the soup will be tasteless .
- Add your fresh or dried pepper: make sure that you add a sufficient amount of pepper inside the melon.
- After a few seconds now add your crayfish, salts, and other soup spices meat: please make sure that you monitor when you put your ingredients to avoid making mistakes.
- Add cooked meat, fish, and steamed water: so that the taste will be wonderful.
- Now stir: stir till every thing is mixed together.
- cook soup until it's done: make sure that you cook the soup for about 7-8 minutes.
- Add leafy vegetables: Add the leafy vegetables and stir well. Cook for about 5 minutes or until the vegetables are wilted.
- Serve: Serve the egusi soup with your preferred swallow (e.g., fufu, Garri, or pounded yam e t c).

Note that;
- Use a blender or food processor to grind the egusi seeds into a fine paste.
- Adjust the amount of pepper and seasoning to your taste.
- You can add other ingredients like locust beans (iru) or ogiri to enhance the flavor.
- Egusi soup can be made with various types of meat or fish, so feel free to experiment with different options.
