I have experienced this rewrite first hand. I started writing the story with the topic in hand and a destination at heart, but the plot and the details was not planned, I knew I would find my way with time and I did.
In another instance, I just kept writing the story I had in mind until I got to a point where I was stuck and could not go further. I knew something was wrong with the plot, so I had to go over it again and determine the new plot based on what I had written not on what I had in mind. So, the story gave me direction in this case.
For authors, I think this is a good way of writing because sometimes we might not have all the answers but the story can tell itself through us. Most times, even the ending can be rewritten.
It is not literally the books writing themselves, but the story just keeps giving direction to the book.

I have experienced this while joining the different contests that took place in FreeWriters Community. It is exactly as ezun explained it. Sometimes it takes different direction then what was intended.
Literature is a constant process of rewriting. What we write when we reread it later seems outdated, far from our style. But it is part of the growth process of every writer. If you write from one thing and everything seems perfect to you, then you are in big trouble. Your essence should not be to write.

While this is not always the case in every story. But, when it happens, I guess that the writer becomes a sort of reader to the story and his taste would apply to what is going to happen next in the story.
