Delicious wholesome balanced lunch. Cheap!!
Hungry? Here's an idea for a quick delicious lunch for two! Did I mention inexpensive? Cost around $3 (USD).
You'll need a small can of refried beans (i like homemade so I make my own), a few shreds of cheddar cheese, a pinch of chili powder, a half of a medium sized avocado, and 2 sweet potatoes.
Heat up the beans. Chop and fry potatoe rounds on a non- stick frying pan (i add a little bit of oil if I want them crunchy) until soft; add salt to taste. Slice your avocado and dish out all the components - be creative!
