SLC-S24/W4 | Date Cake

Hi guys welcome to my log this week, I'm so happy to explore different types of cake recipes and how to bake it.

This week I made date cake and the taste was really pleasant. To begin, this are the ingredients I used to bake the cake.


Ingredients


  • Butter 125g
  • Sugar 125g
  • Flour 125g
  • Eggs 2
  • Dates 250g
  • Warm tea 160 ml
  • Cashew 25g
  • Baking powder 1 tsp
  • Vanilla 1 tsp
  • Bi carbonate soda 1/2 tsp

I removed the seeds from the dates then add it to a bowl, in the second picture, I added 160ml of warm tea to the dates then add bicarbonate of soda and cover it for 10mins.

Added 125g of butter and sugar in a bowl and whisk till the mixture turn light

Add egg to it and continue whisking till it is properly mixed

Added 1 teaspoon of vanilla flavour and whisk properly so as to be evenly distributed

I sieved baking powder together with flour to the mixture and turned it for my bater to be ready.

I added the mixture of the date and tea to the batter and mixed well

Getting my cashew nuts ready to sprinkle on my cake

I greesed my pan, added the batter to it then sprinkled the cashew nut on it


I put the cake in the oven at 175°c to bake

What difficulties did you encounter while making this recipe?

Have you noticed the way I smiled while carrying the cake It is because I almost lost this my cake but I was so grateful that it came out very nice. So after 5 minutes of my cake in the oven, I lost power supply. It was really frustrating so I changed the baking method to using a pot on the fire so before I got the heat that is required for the cake to bake my mind skipped if my batter has spoil.

This remind me that if I'm just succeed in this cake making I need to have a gas oven, This really helped me to easily switch once my power supply is interrupted.

Explain the importance of each of the ingredients you used in making this cake.

Flouras the main ingredient in the cake, It has impact on the cake. It helps the cake to have it's own structure, if form the base of the cake and helps hold every ingredient in the cake together.
⁠Sugarit is a sweetener and it helps to make the cake have a sweet taste.
Eggit is a moisturizer which helps in adding moisture to the cake and it helps to bind all ingredients together as it also serves as a binding agent.
Baking powderit very important in cake, you can't do without it. It serves as a leavening agent that helps the cake to bake with fluffy texture and it helps the cake to rise.
Vanilla flavorit gives flavour to the cake.
⁠Butterit is a moisturizer which helps to contribute moisture to the cake giving it a very tender texture, it also gives it a salty taste to blend with the sugar.
Dateit serves as a sweetener to the cake and it gives the cake a brownish colour, it also has a pleasant flavour, then add a little sweetness to the cake as you eat it.
Bicarbonate of sodait serves as a dissolver to the date soften it and then it serves as a leaven too as it helps the cake to rise making is light and fluffy.
Teait helps the date to soften and it contribute to the brownish colour of the cake, it also serves as a moisturizer.

So when this ingredient is being used in appropriate portion it helps it to have a good taste. Making this cake fluffy but when it is used wrongly it can damage the cake or give some kind of unpleasant taste to it therefore, while baking cake you should try to use an appropriate ingredients in the appropriate proportion.

In all, It was fun to explore the making of this cake and I could say that it is one of those you can bake for your family and loved ones.

Looking at the photos, I can only imagined how sweet this cake would be. Date is a sweet nut, using it to make cake will definitely give it a nice flavor and taste. I like the way yours came out, it looks soft. The toppings with cashew nuts also makes the cake more attractive.

Am a fan of nut be it cashew nut, groundnut or any crunchy nut but using it to make cake is what i cant even wait to have a test because i already imagine how good this will test and to top it all you added date to sweeten the cake how delicious, your details of explanation on how this yummy cake was achieved is top notch let me get my ingredients ready for this yummy cake.
