Now i will present one of my favourites, dry cured salmon, red currant, caviar, rocket ...
... and cream cheese, on top of a fresh french baguette. Since i am a sushi chef, i like to prep my fish, marinated in salt, sugar, lime zest and thyme, gives salmon a nice flavor. When its marinated salmon steak becomes firm and you can cut it with knife on thin slices like sashimi. In the meantime i made baguette, sliced and roasted them a bit. Topped with cream cheese, a bit of rocket (arugula), and thin slices of marinated salmon, caviar and red currant. I like when it pops in your mouth. Very tasty plate to wipe it out.

Nothing better then a little juicy smoked salmon, but i didn’t have it that day. Since christmass holidays are coming there will be plenty of fish on the menu. 👨🍳🦪🍤🍣
